Kyuri no Sumomi (Japanese vinegared cucumber)


Serves 4

Slice cukes very thinly on a diagonal. Place in a bowl and salt moderately. Set aside for 20 minutes. Drain, rinse with water, squeeze gently to remove excess moisture. Add Wakame, chopped coarsely. Mix together vinegar, soy sauce, and mirin, and toss dressing with vegetables. Heap a small amount into center of tiny salad bowls.

Yoko's Cucumber Salad

Salt the cucumber which hass been peeled and thinly sliced. Squeeze lightly to drain the liquid Mix sugar with rice vinegar, ginger, and sesame oil. Mix everything together, and chill for a few hours. When ready to serve, drain the liquid, and place cucumbers in the serving dish, topped by a sprinkle of roasted sesame seeds.

Combine first four ingredients. Add cucumbers and shrimp.

Spicy Japanese Cucumbers 2

Put cucumber slices in salt water, let sit. Combine sesame oil and chile paste. Mix with cucumbers and sprinkle with scallions. Eat immediately.
